They cloned Stella! Hey boys and ghouls! I'm back to my antics with this Halloween edition. Come join me on the dock as we attempt to clone Stella Rosa Black Wine. Don't be scared...JOIN US! Notes: Guys this is basically a mixed berry wine containing blackberries, blueberries, cherries, raspberries, and muscadine grapes. Always feel free to experiment as you like and have fun, just like were having fun with this. The finished juice or must you get before adding your sugar should be around 1.050 specific gravity. Target this number if you're looking for a closer clone with about the same 5% a.b.v. as the real wine. If going off the beating path with fruit. I would suggest mixing different berries like mulberry, elderberry. huckleberry, etc. They will yield some unique wines with awesome flavors! If changing sugars, try raw cane sugar, dememara or muscavado! Last, but not least, the yeast. I recommend Lalvin RC 212, B71, or D47. Also, if you really want to get some more complexity, Throw half an ounce per a gallon of either French Oak (medium toast), Oak, Amburana, or the wood of your choice. Try 1 cinnamon stick and two vanilla beans. One ounce coffee beans and or cocao nibs will really blow your mind. Please make sure to check flavor every other day to see if it's to your liking. These items should be added during secondary fermentation/conditioning. Please be safe and remember to check me out on Instagram. Don't forget to like, share, and subscribe. Thank you and love you guys!
