Ingredients: • 2 kg Indori Potato • Salt to taste • Oil for frying Method: • Wash the potatoes really good and clean them. • Peel the potatoes and transfer them into water. • Slice the potatoes and transfer the chips into water. The slices shouldn’t be too thin but a little thick. • Take the slices out into dish and discard the water. • Clean the container well and fill in water. • Again transfer the slices into the water. • Wash the slices like this for at least 4-5 times until the floating water is clear. • Soak the potatoes in clean water for at least an hour. • Heat up water on medium heat in a pan and bring it to boil. • Add salt and mix well. • Take few of the slices out the cold water and drain all the water from it. • Transfer them into the boiling water and cook them for just about 3-4 minutes. • When the slices turn nice and translucent and flexible, it means the slices are steamed well. The slices should be flexible but shouldn’t break. • Place a stand in a dish and a strainer on it. • Take the slices out of the boiling water, drain all the water and transfer them into the strainer. • Add 1/2 tbsp salt into the boiling water and steam next batch of the slices. • Steam all the slices in this way. • Until next batch is steamed, transfer the steamed slices on a clean cotton cloth to dry. Spread them well. • Make sure you dry them under shed or fan and not in hot sun until they are still wet. • After drying for about 2-3 hours under shed, flip the chips over and dry well from other side too. • After drying the chips under shed or fan for 2 days, sun dry them under hot sun for at least a day until they dry completely. • When the wafers are completely dry, store them in an airtight container or in zip lock bag. • Heat up oil and drop the wafers in it. • When the wafers are fried well, take them out, drain excess oil and transfer them into a dish.
