Peel and devein your shrimp, but leave the tail on. Then butterfly your shrimp. 2. Next, make your egg batter. Add 2 eggs, 1 cup AP flour, 1 cup butter milk, 2 tbsp hot sauce and 3 tbsp creole seasoning to a bowl and whisk to combine all the ingredients. Then, add to the shrimp. 3. Now, its time to prepare our flour for dredging. Combine 2 cups AP flour, ½ cup corn starch, ½ bread crumbs, and ½ panko to a bowl and mix. 4. Take shrimp out of the marinate into the dry mix flour. Completely coat the shrimp. Shake off the excess flour just a bit, then place on sheet tray to prepare for frying. 5. The oil should be 350 degrees Fahrenheit. Drop the shrimp into the hot oil. Cook for about 2-3 minutes until golden brown. Make sure you cook enough to not over crowd the fryer. Too much in one pan is going to reduce the temperature of the oil which will cause your final product to be oily. 6. Take the shrimp out and place them on a cooling rack to cool down a bit for a minute or so. Now just like anything out of the deep fry, hit it with a little salt if ya like a little bit more flavor. I personally don't, because I believe the shrimp is perfectly flavored and fried with our recipe. Now it's time to enjoy your scrumptious fried butterfly shrimp with your favorite dipping sauce.
