The keys are strong coffee, a fast dip, and a real overnight chill so the ladyfingers set and the mascarpone cream tightens up for clean slices. 👨🍳 Tiramisu Servings: 10 to 12 Prep Time: 30 to 35 minutes Chill Time: 8 to 24 hours Total Time: 8 hours 35 minutes 🥣 Ingredients Coffee dip Espresso or very strong coffee, room temp 360 g (1 1/2 cups) Dark rum 180 g (3/4 cup), divided Mascarpone cream Mascarpone 452 g (16 oz) Egg yolks 6 large Granulated sugar 133 g (2/3 cup) Heavy whipping cream 480 g (2 cups) Vanilla extract 10 g (2 tsp) Assembly Ladyfingers 40 (savoiardi style) Unsweetened cocoa powder 33 g (1/3 cup), plus more as needed 🥄 Instructions Coffee dip Pour coffee into a shallow dish. Stir in 90 g (6 tbsp) rum. Reserve remaining 90 g (6 tbsp) rum. Yolks and sugar Set a bowl over gently simmering water, not touching. Whisk yolks and sugar 6 to 8 minutes until pale, glossy, and ribbons. Remove and whisk 1 minute. Mascarpone Mix mascarpone into yolk mixture until smooth, keep it gentle. Whip cream Whip cream to medium stiff peaks. Add vanilla in last 10 to 15 seconds. Finish cream Stir reserved rum into mascarpone mixture. Fold in whipped cream in thirds until no streaks. Assemble Use a 9x13 dish. Dip ladyfingers quickly, about 1 second per side. Do not soak. Layer ladyfingers, half the cream, cocoa. Repeat ladyfingers, remaining cream, smooth top. Chill Cover and refrigerate at least 8 hours, preferably 12 to 24. Finish Sift cocoa on top right before serving. Slice with a sharp knife wiped clean between cuts. 💡 Pro Tips • The dunk is fast.
