It’s easy to ice a square cake with fondant – let our step-by-step video show you how. 1. Knead ready to roll icing until pliable. Roll out into a circle roughly 5mm thick, turning all time to prevent it sticking to surface. Dust icing sugar or rub vegetable fat on surface to help prevent sticking. Ensure icing is wider than cake and that there is enough to cover sides. 2. Fold icing over rolling pin. Drape over a cake already covered in marzipan and brushed lightly all over with cooled, boiled water or vodka to help icing stick, and let it fall over edges. 3. Using hands, gently smooth icing over top and sides of cake, easing it near bottom to prevent any big folds. 4. Firmly press icing to bottom, then use a sharp knife to trim off excess icing all around. 5. Run icing smoothers all over top and sides for a super smooth finish and straight edges. Hands dusted in icing sugar will also do job. 6. Finish cake by trimming off final bits of excess icing at base.
