Ingredients For the Filling • 1 cup boiled and shredded chicken • 1 cup onion (finely shredded) • 1 cup carrot (julienned) • 1 cup Beans ( chopped) • 2 tbsp spring onions (chopped) • 1 cup bell peppers ( chopped ) • 2 green chilly ( minced ) • 2 garlic cloves (minced) • ½ tsp black pepper • ½ tsp salt (adjust to taste) • 1 tsp chili sauce (optional) • 1 tbsp oil • 5 eggs ( scrambled egg ) For Wrapping • 10–12 spring roll sheets • 2 tbsp flour + 3 tbsp water (to make sealing paste) For Frying • Oil for deep frying For Serving • Sweet chili sauce or ketchup ⸻ Method 1. Prepare the Filling 1. Heat 1 tbsp oil in a pan. 2. Beat egg and scramble, remove and keep it aside. 3. Add minced garlic and green chillies, sauté until fragrant. 4. Add onion , sauté until lite brown. 5. Add shredded chicken, carrot, beans and spring onions. 6. Stir fry for 2–3 minutes. 7. Ad black pepper, salt. 8. Mix well and cook another 2 minutes. 9. Add scrambled eggs and mix well . 10..Turn off the heat and let the filling cool. 2. Wrap the Spring Rolls 1. Place a spring roll sheet on a flat surface. 2. Add 2 tablespoons of filling near one corner. 3. Fold the sides inward and roll tightly. 4. Seal the edge with the flour paste. 3. Fry the Spring Rolls 1. Heat oil in a deep pan. 2. Fry the spring rolls on medium heat until golden brown and crispy. 3. Remove and place on tissue paper to absorb excess oil. 4. Serve Serve hot with sweet chili sauce or ketchup for the perfect crunchy snack.
