This week, a dear friend gifted me fresh plums, and I turned them into a sweet, homemade plum sauce. I also baked a rustic plum cake that filled our home with the warm scent of autumn baking. Later, while my husband went fishing, I enjoyed a peaceful lakeside walk with our fox terrier, Hilma 🐾, and we wandered through nature’s calm beauty. Back home, I prepared a simple yet hearty baked eggplant in tomato sauce for our late lunch 🍆🍅, and afterward, I cooked Hilma’s healthy homemade meal with chicken, carrots, and sweet potatoes. The day ended perfectly with coffee and ice cream, drizzled with my freshly made plum sauce ☕🍨. Thank you so much for being here🌸💛 Sending a lot of hugs....💛 📌Rustic Plum Cake📌 Ingredients:📌 250g plum sauce or (500g ripe plums (halved, pits removed) 150g butter (softened) 150g sugar (white, dark, or light brown) 3 eggs 200g flour 2 tsp baking powder 1 tsp vanilla extract (or 1 tsp vanilla sugar) Pinch of salt 3 tbsp milk Optional: 1 tsp cinnamon + 1 tbsp brown sugar for sprinkling on top Instructions:📌 1. Preheat the oven to 180°C 2. Line a 24 cm (9-inch) round cake tin or springform pan with parchment paper. 3. Beat sugar and butter together until light and fluffy. 4. Beat in eggs, one at a time, then add vanilla. 5. In a separate bowl, mix flour, baking powder, and salt. 6. Fold dry ingredients into the wet mixture. If the batter feels too thick, add milk and fold again. 7. Spread batter evenly in the pan, then spread the plum sauce evenly over the batter. (If using fresh plums, arrange plum halves on top, cut side up, gently pressing them into the batter.) 8. If desired, sprinkle with cinnamon + brown sugar for a cozy crust 9. Bake for 40 to 50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. 10. Remove the cake from the oven. Let it cool slightly before serving. Delicious when warm, paired with vanilla ice cream, cream, or a dusting of powdered sugar.
