I'll show you this cool root vegetable, Chinese Artichoke or Crosne. To skip right to the plant, go to around 2:50. Prior to that, it's a whirlwind tour of my greenhouse at the beginning of spring. Chinese Artichoke (Stachys affinis in the latin) is not so common as other root vegetables. It's from the mint family, and like many relatives, it spreads pretty vigorously in the garden. The edible part is the rhizome (I think I said tuber in the video - bad horticulturist!) which is kinda funny looking, white and bumpy. It's crisp and fresh tasting, reminding me of bean sprouts. It's an attractive plant, with textured foliage and even has some nice tall purple flower spikes.
