RECIPE Ingrdients 4 tbsp (60g) butter ½ onion (medium), diced 3 cloves garlic, finely minced 4 tablespoon all-purpose flour 2 cups chicken or vegetable stock 1 tsp kosher salt (to taste) ½ tsp black pepper ¼ tsp paprika + ¼ tsp smoked paprika ¼ tsp grated or ground nutmeg, optional but recommended ½ chicken bouillon cube, optional but recommended 1-2 broccoli heads cut into small bite sized pieces (to make 3 cups) 1 large carrot, coarsely grated to make 1 cup 1 cup milk + 1 cup heavy cream 8 oz (2 cups) cheddar cheese, grated Instructions 1. Grate the cheddar cheese (don’t buy pre-grated), dice the onion, mince the garlic, grate the carrot and cut broccoli into small bite sized pieces. 2. In a deep dutch oven or pot on medium high heat, add butter, onion and garlic. Saute until onions start to soften (2-3 minutes) 3. Add flour and saute while mixing for another 1 -2 minutes until flour looks cooked and slightly browned. 4. Slowly pour in veggie stock while mixing. Bring to boil. 5. As soon as you see it start to boil, add in pepper, paprika and smoked paprika. Then add in freshly grated or ground nutmeg. Mix and cook for another minute. 6. Add in grated carrots, broccoli and chicken boullion cube. Turn down heat to medium-low and simmer for 15 minutes. 7. Add the milk + heavy cream and mix. 8. Immediately after, add in the cheese and mix. Cook for 2-3 minutes or until cheese is fully melted and incorporated. Now, season with salt to taste and mix. 9. Transfer to a bowl and serve with baguette. Enjoy!
