DINENGDENG IS ORIGINALLY from the Ilocos Region of the Philippines, called inabraw. It is similar to PINAKBET which both uses bagoong as soup based. Unlike pinakbet though, Dinengdeng Is supposed to have fewer vegetables , but i prefer to add more vegies, and it always turns out more delicious. Fried fish can be subtituted with daing, small dried shrimp called KURUS in Ilocano, or even better shredded TINAPA or filipino smoked fish. Ilongo region also have their own version called LASWA, but only use salt instead of bagoong, and use any vegetables available in the garden. Whereas in the southern region they have LAW-OY VEGETABLE SOUP, MY DINENGDENG is actually a fusion of both dishes cook in tagalog version ( ginisa, guisado, dish are always sauteed with oil garlic onion) but i only added the oil at the end AS I ALWAYS DO EVEN IN MY PAKSIW DISHES.
