INGREDIENTS: ✔️ 2 kilos Tahong (mussels) ✔️ 1 knob ginger (sliced) ✔️ 3 cloves garlic (minced) ✔️ 2 tablespoon soy sauce ✔️ 2 tablespoon vinegar ✔️ 1 tablespoon oyster sauce ✔️ 1/4 teaspoon black pepper ✔️ 2 to 3 pieces dried bay leaf ✔️ Siling labuyo ✔️ oil for sauteing DIRECTIONS Wash and drain the mussels and then transfer them to a pot. Add the ginger and water. Cover the pot and let it boil until the shells open up. As soon as the shells open, turn off the heat. Drain the mussels and rinse them with cold water to stop the cooking process. Allow them to cool a bit, and then remove the meat from the shells one by one and then put them into a bowl. Cut the wood hair if any. Heat some oil in a pan. Saute the garlic for a few minutes until light brown and aromatic. Add the mussels and saute for a few seconds. Add the bay leaves and sprinkle some black pepper. Add chilies depending on how spicy you like. Saute for a few seconds. Add the soy sauce, oyster sauce and vinegar. Do not stir for a whole minute to allow the vinegar to cook. Stir gently until the sauce is thickened and reduced. Turn the heat off. Transfer the spicy adobong tahong to a serving bowl. You can serve this as an appetizer or pulutan or with hot steaming rice. Yummy!
