RECIPE: Lebanese charcoal chicken: Spice rub or dry marination mix preparation: Sweet paprika 1 tbsp Smoked paprika 1 tbsp Pepper 1 tbsp Cumin 1 tsp Coriander seeds 1 tsp Oregano, thyme 1.5 tsp Sumac 1 tsp Grind everything in a mortar and pestle into a crushed form. chicken 1 kg with skin - 1.25 kg Garlic - 4-5 Crush the garlic in same mortar and pestle, not make a paste. Cut chicken on the back of breast side like a straight line. Apply crushed garlic all over chicken. Then rub salt/sea salt all over as second rub. Next apply a full lime all over. Make sure to apply inside and outside of the chicken. Next apply splash of olive oil. This wet mix helps to hold the dry marination. Now sprinkle the dry marination to wet marinated chicken. Rest for 15-20 minutes. Meanwhile make charcoal and grill ready. Use wood coal for better taste. When grill ready place it as breast side down. Don’t forget to flip or rotate in 2-3 minutes intervals. It will take 20 minutes to properly cook depending upon the size of the chicken you take. The skin will burn a bit that’s okay. Once done rest it for 10 minutes to relax the muscles of chicken and to get it juicy.
