I really like the concept of big batch meal planning and prepping. But my back and budget do not always allow it. So I came with with a new solution and calling it Once a Month Meal Planning - but it's not the way you think. I'm taking a few of my key recipes that my family needs and eats daily, and taking one day of the month to make or prep them. In this case, bread (specifically egg and dairy free bread) that my autistic son and my allergy son can both eat, making it in batch and freezing it to pull from all month long. I actually got enough made that in theory, we could have 2 loaves per week for 6-8 weeks. But with fresh (even frozen) bread, I don't know that it will last. It did remove something off of my mental plate though. For that I'm thankful. Knowing I have safe bread, a staple in our home, ready to pull at night and be thawed in the morning. This is also a really great budget-friendly way to plan and prep for your family in bulk. Thanks for hanging out with me and I hope you get some inspiration. 🥙 Recipes Mentioned in this Video: 4 cups of flour 1 cup oat milk 1/2 cup warm water 1/4 cup avocado oil 1 Tablespoon active yeast 1 teaspoon salt 1-2 Tablespoons honey 1/2 cup sourdough discard (optional) vegan butter for at the end rubbing over the top while warm. Mix all ingredients in a stand mixer with a dough hook until cleanup stage. Increase speed to medium, mix for 5 minutes. Transfer to oiled bowl. Cover and proof, doubling in size. Split dough into two loaves. Form into loaf shape and transfer to oiled loaf pans. Allow to fill pan. Bake at 375F for 40 minutes, until tops are golden brown. Rub with vegan butter. Allow to cool 5 minutes in pan, remove to wire rack. Allow to cool completely before slicing. Can be wrapped in plastic wrap or stored in plastic bag for freezer storage. Pull 12-14 hours before needing.
