As a mom of two toddlers, having meals ready for me to heat and eat is necessary. Today I am making with you apple pie French toast bowls and southwest cheesy potato bowls. For those who are new, hello! My name is Olivia and I am a proud mom of two toddlers and a type 1 diabetic of 20 years. It is my life goal to make living with diabetes, more sustainable and enjoyable, and I want to help you on YouTube do the same. Apple Pie French Toast Bowl: PER SERVING: 2 slices low calorie bread 1/4 cup liquid egg white 1/4 cup milk 1/2 tsp cinnamon 1/2 peeled and cube apple of choice Crumble Topping: 1/2 tbs melted butter, 1 tbsp brown sugar, 1 tbsp flour. 1.) cube bread in the bite-size chunks, prepping into a grease casserole container. 2.) sprinkle apples over bread, and mix. 3.) in a small bowl, mixed together, milk, egg, whites, and cinnamon. Pour over bread cubes and let’s sit for a few minutes. 4.) sprinkle with crumble if you choose, and bake for 20 minutes in a 400° oven. Southwest Cheesy Potato Bowl: PER SERVING -1/4 lb potato wedges -1/2 cup diced onion and peppers -1/4 lb lean ground beef -taco seasoning -salsa verde sauce -black beans -nonfat greek yogurt. -queso -shredded cheese 1.) air fry potatoes, peppers, and onions in a 400° air fryer for about 15 to 20 minutes. 2.) well potatoes are cooking, cook your ground beef over the stove and add in taco seasoning. 3.) wants potatoes and beef are done, assemble bowls. Placed potatoes down first, top with ground beef. 4.) drain and rinse, black beans, and top bowl. 5.) mixed Greek yogurt with salsa verde sauce, tap onto bowl 6.) top with queso, and shredded cheese.
