Mango curry, also known as amba maluwa is a sweet, spicy and sour Sri Lankan favourite. Simple to make and packed with flavour. This curry is made with green, firm, unripe mangoes. Ingredients 500g green mango 1 teaspoon chilli powder ½ teaspoon turmeric 1 teaspoon salt (to taste) 2 teaspoons roasted curry powder 1-2 tablespoons sugar 2 tablespoons oil 3cm piece cinnamon 3 cardamom pods 3 cloves 1 onion, sliced 3 garlic cloves, chopped 1 curry leaves sprig 1 cup of water (250ml) Method Wash the mangoes. Slice off the top stem. Slice off the cheeks of the mangoes. Cut the sides off the mango seed. Then cut each mango cheek into 3 strips. Place the mango pieces in a bowl. Add chilli powder, turmeric, salt, roasted curry powder and sugar. Give a good mix and leave to marinate. Meanwhile, heat the oil in a saucepan over a medium heat. Add cinnamon stick, cardamom pods and cloves. Fry for a minute until fragrant. Add sliced onion. Sauté for a few minutes until the onions have softened. Add chopped garlic and curry leaves. Cook for a minute. Add the mango and mix well. Cook for 2 minutes. Add water. Cover and cook until the mango is tender. Add salt and sugar if required. Serve with rice.
