Prep time: 10 mins Cook time: 20 mins Servings: ~8 parathas Ingredients: 2 cups spinach 2 cups wheat flour 1 tsp ginger, 1 tsp garlic 2 tsp sesame seeds, 1 tsp ajwain 2 tbsp yogurt 2 tbsp ghee 2 tbsp corn flour ¼ tsp baking soda 2 tsp chili flakes oil Recipe: In hot water, add baking soda and bring to a boil. Then add the spinach. Do not cover Bring it to a boil again. Turn off the heat and transfer the spinach from the hot water to a cold water bath (blanching) In a blender, blend the spinach, ginger and garlic to make a puree. Don't add additional water - the spinach has enough water In a bowl, mix the wheat flour, salt, yogurt, ajwain, sesame seeds, chili flakes and the spinach puree. Knead everything o make the paratha dough. Cover and let sit for 10 mins Make small balls of the dough and roll it into a roti In a separate bowl, mix the melted ghee and corn flour Spread the ghee mixture on the roti. Sprinkle some dry wheat flour on top Fold the roti to make it semi-circular. Spread another layer of the ghee mixture and sprinkle wheat flour Fold one more time to make it a quarter circle. Sprinkle some more flour on both sides, and roll with a light hand to make a triangular paratha On a pan, apply some oil or ghee and cook the paratha Serve with yogurt or any side of your choice Enjoy the delicious layered palak paratha!
