With a Holy Mote at the ready, approach Thextera and use it on him. This will either greatly reduce his health or kill him outright. If he's still alive, simply attack him a couple of times. The surrounding wolves shouldn't cause too much of a problem, but you can always use a Potion if necessary. -- Without a Holy Mote -- Before accepting the hunt, travel to Dalmasca Westersands / Galtea Downs and search for the Rabanastre Watch friendly that roams this map. You'll want him to cast Protect on you as this will reduce the damage you receive. Rabanastre Watch doesn't appear during the Thextera hunt. You can alternatively get Protect from Giza Plains or Dalmasca Estersands. Run back to The Sandsea to accept the hunt, then return to the Galtea Downs to find Thextera. You'll want to attack Thextera from the Rabanastre side of the rock that Thextera is behind. This way Thextera will only be able to attract 2 wolves to help, rather than 4. Keep attacking the over-sized wolf and using Potions where necessary - you should only need around 3 or 4 of them. Eventually he'll fall.
