Now, I wouldn’t call this an “authentic” Peranakan Chap Chye recipe (because what is authentic even) but this pot of mixed vegetables is something easy to put together especially with all pantry staples like dried mushrooms, black fungus, lily buds, beancurd skin and tang hoon. While Nonya Chap Chye is a simple stir fry recipe, it is not something that I’d recommend cooking for on worknight. Like most nyonya dishes, Chap Chye is a labour of love and will take some time to prep and is best stewed for longer too. On days that Mama (or my mother) is feeling a little fancy, they’ll add pork loin or pork belly and even prawns to the mix. But one thing that stays the same is our little family secret of adding Sichuan Soya Beancurd Chili and Sesame Oil right before serving!"
