Pinterest: https://pin.it/3RMaxL7If Email: [email protected] Recipe for pistachio cheesecake: 🧁 Ingredients 🟤 Biscuit Base • 120g digestive biscuits or graham crackers • 55g unsalted butter, melted ⸻ 💚 Pistachio Cheesecake Filling • 330g full-fat cream cheese, softened • 100g powdered sugar, sifted • 2–3 tbsp readymade pistachio paste • 1 large egg + 1 yolk • 2 tsp cornflour • 105 ml homemade sour cream (👇) • ¼ tsp vanilla extract (optional) 🥣 Homemade Sour Cream: • 100ml fresh cream (e.g. Amul) • 2 tbsp thick curd or hung curd • 1 tsp lemon juice or vinegar → Mix and let sit 10–15 mins before using ⸻ 🟢 Kunafa Pistachio Layer • 100g kataifi (kunafa pastry), thawed • 35g melted butter • 6-8tbsp pistachio paste • Pinch of salt ⸻ 🍫 Cocoa Chocolate Topping • 3 tbsp unsweetened cocoa powder • 2 tbsp sugar • 2 tbsp butter • 3–4 tbsp fresh cream or milk • Pinch of salt • ¼ tsp vanilla extract (optional) or simply use 1:2 ratio of cream and dark chocolate ( ganache recipe ) ⸻ 🔪 Instructions 1. Biscuit Base • Preheat oven to 160°C (320°F). • Mix crushed biscuits with melted butter. • Press into base of greased or lined 6-inch springform tin. • cool slightly. ⸻ 2. Pistachio Cheesecake Layer • Beat cream cheese until smooth. • Add powdered sugar and pistachio paste. Mix until fully blended. • Add egg + yolk, mix gently (don’t overbeat). • Stir in flour, sour cream, and optional vanilla. → Pour over biscuit base and tap gently to level. → Bake at 160°C for 45–55 minutes until set with slight wobble. → Cool in oven (1 hour), then chill in fridge 6+ hours. ⸻ 3. Kunafa Pistachio Topping • Fluff and butter kunafa pastry. • Toast in a pan or oven (170°C) until golden brown. • Mix warm kunafa with pistachio paste • Once cheesecake is chilled, gently press this mix on top. ⸻ 4. Cocoa Chocolate Glaze • In a saucepan, add cocoa, sugar, butter, and cream/milk. • Heat on low, stirring until smooth and glossy. • Add salt + vanilla (if using). • Cool slightly, then pour over kunafa layer. • Chill 30 mins to set, or serve melty.
