Welcome to Osama Jalali’s Food World 🙏 Today we are making a legendary Ramadan delicacy — Purani Dilli Ka Haleem. This is not just any haleem. This is slow-cooked, hand-mashed, authentic Old Delhi style haleem made with lentils, wheat, barley and tender mutton, blended together into a rich, smooth and flavour-packed dish. Made using traditional techniques and freshly ground haleem masala, this recipe captures the real taste of Purani Dilli during Ramadan. 🥣 Ingredients For Lentils • Masoor Dal – 50 g • Dhuli Urad Dal – 200 g • Chana Dal – 200 g • Turmeric – 1 tsp • Salt – 1 tsp For Wheat & Barley • Gehun (Wheat) – 250 g • Jau (Barley) – 250 g • Turmeric – 1 tsp • Salt – 1 tsp Haleem Masala (Dry Grind) • Cumin – 1 tbsp • Black pepper – 1 tbsp • Fennel seeds – 2.5 tbsp • Black cardamom – 2 • Green cardamom – 8–10 • Cloves – 8 • Cinnamon – 1 inch • Nutmeg – ½ • Mace – 1 • Bayleaf – 3 For Mutton • Oil – 300 ml • Boneless mutton – 1 kg • Sliced onions – 6 medium • Ginger garlic paste – 2 tbsp • Red chilli powder – 2 tbsp • Coriander powder – 4 tbsp • Turmeric – 1 tbsp • Salt – 1 tbsp • Amchoor powder – 1 tsp • Chaat masala – 1 tbsp Garnish • Green chillies • Fresh coriander • Ginger juliennes • Lemon • Brown onions 👨🍳 Method (Traditional Slow Cooked Style) Soak all lentils, wheat and barley overnight separately. Pressure cook lentils and wheat/barley separately with turmeric and salt. Prepare mutton by frying onions in oil until golden. Add ginger garlic paste and mutton. Add spices and cook until oil separates. Pressure cook till mutton becomes very tender. Mash the mutton well. Blend wheat and barley once cooked. Mash lentils lightly. In a heavy bottom lagan, combine lentils, wheat-barley mixture and mashed mutton. Now comes the most important step — Slow cook and continuously mash with a wooden masher for at least 30 minutes. Add freshly ground haleem masala, amchoor and chaat masala while cooking. Adjust consistency with water as required. Finish with green chillies, coriander, lemon juice and brown onions.
