Fill a large stock pot with 16 cups of water Bring the water to a boil Add 1 cup of salt and stir until the salt is dissolved Remove the pot from heat Pour 2 lbs of dried in-the-shell peanuts into the brine and stir well Set a pie plate, bowl or other weight on top of the peanuts to ensure they stay submerged in the brine- I used a large mixing bowl filled with water to weigh them down Let the peanuts soak for at least 6 hours (I let mine soak overnight). You can stir them once or twice during this time to ensure all the peanuts are getting soaked evenly in the brine After at least 6 hours of soak time, dump the peanuts into a colander and drain off all the brine You’ll then need to let the peanuts dry. I placed mine on racks in the dehydrator to speed up the process, but they can also be air dried at room temperature or with a fan on them. In the dehydrator they took about 4 hours, at room temperature they could take up to 3 days. Once the shells are dry and crunchy and the skins that surround the peanut inside are dry & papery, they are ready for roasting Place peanuts in a single layer on a baking sheet and pop into a preheated 350F oven. For 15-25 minutes, depending on how roasty you like your nuts. Stir once or twice during roasting. Remember they’ll continue to roast for a bit even after you pull them from the oven- so pull them out just prior to desired doneness. Remove from the oven and let the peanuts cool thoroughly before storing in an airtight container. If you can keep from eating them all first! These will store well at room temperature for a month or so- but for longer term storage I recommend refrigerating or freezing them. #zone6gardening #ohiogardening #preservetheharvest
