🍅 Apple Tomato Adjika for Winter | Sweet & Spicy Slavic Sauce Homemade adjika with apples — rich, tangy, slightly sweet, and perfectly balanced 🌶️ Great with meat, potatoes, bread, or grilled food. ⸻ 📝 Ingredients (makes about 7 quarts / ~6.5–7 liters) • 11 lb tomatoes • 2.2 lb apples (Granny Smith or any sweet-tart apples) • 2.2 lb carrots • 2.2 lb sweet bell peppers • 5 hot chili peppers (adjust to taste) • 10.5 oz garlic (about 2¼ cups peeled cloves) • 1 cup sugar (200 g) ✅ reduced amount • 1 cup vinegar (white or apple cider vinegar) • 3 tbsp salt ⸻ 👩🍳 Instructions Step 1 Wash tomatoes, apples, carrots, and bell peppers. Cut everything into large chunks so it’s easy to grind. Step 2 Grind all vegetables and apples using a meat grinder or food processor. Transfer to a large pot and cook on low heat for 1 hour 40 minutes, stirring occasionally. Step 3 Wash hot peppers, cut lengthwise, and remove seeds. Peel the garlic. Grind hot peppers and garlic together. Step 4 Add the garlic-pepper mixture to the pot. Add 1 cup sugar (200 g) and 3 tbsp salt. Cover and cook for another 40 minutes on low heat. Step 5 Pour in 1 cup vinegar, mix well, and remove from heat.
