The Rainbowiest Rainbow Cookies

My favorite cookie of all time is the rainbow cookie. Normally made in three layers -- red, white, and green, for the Italian flag -- today I co-op that classic in order to celebrate the start of Pride month! Based on a recipe by Debbie Koenig, this cookie takes a little work: you make a master batter (heh heh) with two tubes of almond paste and five eggs, then you divide it into six bowls and squirt different combinations of food coloring into each. Each colored layer gets spread on to a prepared cookie sheet, baked, cooled, shellacked with orange marmalade (a tip from my friend Nicole Rucker), piled up, pressed down for four hours, and finally glazed with chocolate.
