Ingredients • ½ cup (1 stick) butter • 2 cups sugar (as recipe intended, can knock down to 1 ½ cups) • ½ cup milk • 4 tablespoons unsweetened cocoa powder • 2 cups oatmeal (or steel-cut oats – oatmeal seems to hold a little better) • ½ cup peanut butter • 1 teaspoon vanilla Preparations 1. Combine the butter, sugar, milk, and cocoa in a saucepan. Boil the mixture for 1 minute. a. Suggestion: Wait for mixture to come to full boil before counting timer down; otherwise, cookies might not set. 2. Remove the pan from the stove and add the oatmeal, peanut butter, and vanilla. a. Should encounter some resistance as you stir everything together; otherwise step 1 didn’t boil long enough and cookies won’t set. 3. Form the mixture into balls and drop them onto wax paper. 4. Cool and serve. a. Can either cool in the refrigerator or at room temperature 5.
