Red Cookies & Purple Coffee Ingredients: For the cookies: • Chocolate chips (white and dark) • Oreo cookies For the dough: • 100 g softened butter • 90 g white sugar • 90 g natural cane sugar • 1 egg (room temperature) • Vanilla sugar to taste • 200 g flour • 0.5 tsp corn starch • 0.5 tsp baking powder • 0.5 tsp salt • Food coloring For the coffee foam lattice: • 25 ml water • 10 ml oil • 3 g flour • 2 g sugar • Food coloring Instructions: 1. In a deep bowl, combine softened butter, white sugar, and brown sugar. Mix with a spatula until smooth. 2. Add the egg, vanilla sugar, and food coloring to the butter-sugar mixture. Mix well until the mixture is smooth. 3. Sift in the flour, add salt, baking powder, and corn starch. Stir with a spoon until homogeneous. Then add chocolate chips and broken Oreo cookies, and mix. 4. Form small balls from the dough and place them on a baking sheet lined with parchment paper. Important: leave space between the cookies, as they will spread! 5. Place the cookie dough in the refrigerator for 1 hour — this will help the cookies keep their shape while baking. Remove the chilled dough from the refrigerator and place it in a preheated oven. Bake at 180°C for about 20 minutes. 6. For the lattice, combine all ingredients in a jar with a lid (this makes it easier to mix everything until smooth). Cook on a well-heated pan until bubbles appear, then remove the pan from heat and carefully take off the lattice. Place it on a napkin and allow it to cool (so it becomes crispy).
