Orange Turmeric Smoothie 2 oranges Half a banana 3 teaspoons of turmeric Pepper (around 1 teaspoon) 2 big pieces of ginger (around 1 cm) 2-3 splashes of water, depending on how thick you want it Blend til smooth. . White Sauce 1 tablespoon of hummus 1 teaspoon of Dijon mustard 1 teaspoon of turmeric Salt and Pepper Half a lemon’s juice Few splashes of rice milk Mix well! . Oatcake: Use a bowl that is heat-proof, fill it with whole-grain oats for up to 3 quarters. Add a teaspoon of flaxseeds, baking powder and a pinch of salt, and blend it until it has a flour consistency. Then, pour it into the little bowl, add 2 teaspoons of cocoa powder, 1 teaspoon of cinnamon, 2 teaspoons of agave syrup. Mix well. Add any flavours you want, I love to put some blueberries/raspberries and peanut butter in the middle. Bake it in the oven on around 200-220 Celsius for 15-20 minutes, until the top is cracked and crispy on the outside. . Crispy Tofu: Preheat the oven for 180 Celsius. Cut the firm tofu into thin slices, marinate it in soya sauce, salt, pepper and agave syrup for 15 minutes. Bake it on a baking sheet for 10-15 minutes until it is crispy, but not burnt. . Matcha Energy Balls: Cut up into small pieces: 2 tablespoons of sunflower seeds, 2 tablespoons of pumpkin seeds, around 8 small/6 large dates, 40-50 g of dark vegan chocolate. Add 1 big tablespoon of peanut butter, 1 tablespoon of agave syrup, 2 teaspoons of matcha powder, 3 tablespoons of whole-grain oats. Mix well with a spoon/spatula until it forms a batter, then make small balls out of it. It makes around 12. Leave it in the fridge for 1-2 hours before serving. . Spinach Crepes: Pour hot water on around 70-90g of spinach (normal or baby spinach) so it covers it, leave it for a few minutes. Add 2 cups of flour in a big bowl, add 3-4 pieces of sun-dried tomatoes, salt, pepper, 1 teaspoon of oregano and basil, 1 cup of plant milk, add the spinach with the water, mix til smooth with a hand mixer. Cook it on medium heat with a non-stick skillet with some coconut oil, around 30-45 seconds on each side. . Cheese Sauce: Soak 180-200g of cashews in a bowl for 2-3 hours. Pour in enough water so it covers the cashews. Add it in a blender, add 1 cup of whole-grain flour, 1 can of coconut milk from a can, salt, pepper, 2 tablespoons of nutritional yeast, 1 tablespoon of turmeric, 1 teaspoon of tomato paste, 1 teaspoon of Dijon mustard, blend until it’s smooth.
