honPineapple Upside Down Cake 1 stick butter, melted 1 cup packed brown sugar 2 cans (20 ounces each) pineapple slices, reserve juice 1 jar maraschino cherries 2 1/2 cups cake flour 1/2 teaspoon salt 1 1/2 teaspoon baking powder 1/2 teaspoon baking soda 3/4 cup heavy whipping cream 2/3 cup pineapple juice (from pineapple slices) 1/4 cup sour cream 1 teaspoon vanilla extract 1 Tablespoon pineapple extract 2 sticks butter, at room temperature 2 1/4 cups of sugar 5 large eggs Preheat your oven to 325°. Spray your deep dish 9 x 13“ cake pan with nonstick spray. Melt one stick of butter in the cake pan. Sprinkle one cup brown sugar over the melted butter. Place your pineapple slices over the butter and brown sugar. Place one maraschino cherry in the round hole in the center of each pineapple slice. Set aside. Using a large bowl, sift together the cake flour salt, baking powder, and baking soda. Set aside. Using a large measuring cup, stir together the heavy whipping cream, pineapple juice, vanilla extract, and pineapple extract. Set aside. Using an electric mixer, cream together the two sticks of room temperature butter and sugar. Let this cream for five minutes, scraping down the sides of your bowl occasionally. Add in your eggs, one at a time, until each is incorporated, scraping down the sides of the bowl a time or two. Now, add approximately 1/3 of your flour mixture and 1/3 of the whipping cream/juice mixture at a time, gently mixing just until incorporated. Do this in three batches. Gently spoon the batter over your pineapple slices. Once all the batter is in the pan, gently spread the batter to smooth out the top. Bake in your preheated oven for 45 to 50 minutes or just until the center tests done. Allow cake to rest on your counter for 10 - 15 minutes or until the sides begin to pull away from the edge of the pan. Invert cake onto your serving platter. If any of the pineapple slices and/or cherries do not release from the bottom of the cake pan, gently remove them and place them back on top of the cake.
