This prosciutto and pesto panini is an easy recipe to make for lunch or a light ... turn, weight down, and continue cooking until sandwich is golden and cheese. PESTO PANINI SANDWICH Ingredients 1 cup fresh basil leaves 2 green chillies 8-10 walnut kernels Salt to taste ¼ teaspoon sugar 4 tablespoons olive oil ½ tablespoon lemon juice 8 pita breads 1 cup babycorn strips ½ cup green zucchini strips ½ cup yellow zucchini strips ¼ cup red capsicum strips 1 teaspoon red chilli flakes Butter as required Dried oregano for sprinkling Grated processed cheese for sprinkling Method 1. Blend together basil leaves, green chillies, walnuts, salt, sugar, 3 tablespoons olive oil and lemon juice into a smooth paste. 2. Heat remaining olive oil in a non-stick pan. Add babycorn and sauté till lightly browned. 3. Add green and yellow zucchini, capsicum and mix. Add salt and chilli flakes, mix and sauté well. 4. Switch off heat, add pesto and mix well. 5. Heat a sandwich griller. 6. Apply butter on the pita breads and top the base breads with the prepared pesto-vegetable mixture. Sprinkle oregano and cheese on top and cover with the remaining breads, butter side down. 7. Brush the griller and sandwich with some butter and place the sandwich on the griller.
