We were very amazed to find in Nicaragua a type of millet that puffs like popcorn. They make a type of caramel puff millet balls called turrones. To find out how to make them, we went straight to the source, a small village in the Boaco region of Nicaragua, El Jocote. There is one family there who is the experts at making millet turrones, and we recorded their lesson. One of the important things that they explained to us is that the type of millet is very important. They callet Trigo (trigo millon) cabeza redonda. Other types of millet apparently do not work. We all agreed that this type of puff millet tasted better than popcorn, and I am surprised that this simple food is not more popular around the world.
