Mandawa, a small town in Jhunjhunu, Rajasthan, has become a favourite wedding destination because of its royal touch—ornate havelis, cobbled streets, and a timeless heritage that set the perfect backdrop for celebrations. We were here to witness the chaak bhaat ceremony of Shubham and Tamana, a pre-wedding ritual steeped in warmth, tradition, and flavour. The day began early with preparations for the preeti bhoj, the community feast that brings everyone together. The kitchen buzzed with activity—khasta kachori being fried to golden perfection, halwa gently bubbling, ker sangri slow-cooked with local spices, and aalu vada and dahi vada being carefully plated. The flavours were bold and spicy, with besan and legumes as key ingredients. After the rituals, guests were welcomed with flavoured milk and snacks. The main course began, as tradition dictates, with four kinds of sweets and namkeen served first. Only then did the rest of the meal follow, offered with warmth and generosity. What we witnessed was more than just a meal—it was a deep-rooted food tradition where community, celebration, and flavour come together. A cuisine shaped by the desert, built on humble ingredients, and carried forward with pride and affection.
