This light soup is packed with tender chicken 🍗, fresh veggies 🍅🧅, spicy scotch bonnet 🌶, and creamy garden eggs for extra depth. Served with soft, stretchy fufu — it’s comfort in every scoop! 😋👌 Ingredients: • Chicken thighs and legs 🍗 • 2 medium tomatoes 🍅 • 1 scotch bonnet pepper 🌶 • 2 medium red onions 🧅 • 2 garden eggs (eggplants) 🍆 • Garlic & ginger (for that flavor boost) • 1 tsp rosemary 🌿 • Green onion • 1 carrot 🥕 • 1/2 red bell pepper • 1 tbsp chicken bouillon • Salt to taste 🧂 • Water • Fufu (to serve) Instructions: 1. Blend scotch bonnet, 1 red onion, garlic, ginger, rosemary, and water into a smooth paste. 2. Cook chicken with the blended paste for 20 minutes, flipping halfway. Add salt and bouillon. 3. Add tomatoes, garden eggs, bell pepper, whole onion, carrots, and green onion. Pour in enough water to cover. Cook until veggies are tender. 4. Remove the soft veggies (except the onion), blend them, and pour the mixture back into the soup. Simmer for 20 minutes. 5. Blend the remaining onion and stir it in. Add more water if needed and let it simmer for another 20 minutes. 6. Serve hot with fufu.
