Feta Leeks Phyllo Rolls | Turkish Phyllo Feta Leeks Pastries | Pırasalı Börek Ingredients: 3 Turkish phyllo sheets (these are a little thicker than regular phyllo sheets sold in many super markets. You can use regular phyllo sheets, but need to double the amount, 6 sheets) 5 leeks, outer tough layers and darker green parts removed, cut lengthwise and sliced fine 300g feta, crumbled 1 small onion, chopped fine 1/3 cup olive oil 1/3 cup water 1/2 tsp salt (or to taste) 1/2 tsp red pepper flakes 2 tbsp olive oil, for sauteing onions and leeks 2 egg yolks, mixed with 1 tsp water and 1 tbsp olive oil Directions: Heat a large skillet. Add 2 tbsp olive oil. Saute onions until translucent and then add leeks. Saute until they lose their colour and reduce half their size. Add the spices. Mix feta and sauteed leeks in a bowl. Mix 1/3 cup water and 1/3 cup olive oil in a separate small bowl. Lay the phyllo sheets and spread the water-oil mixture evenly all around the sheets. Lay the second sheet on top of the first one, apply the water-oil mixture on the second sheet as well. Repeat for the third sheet. Cut the sheets into 8 equal pieces. Place the feta-leeks filling on each cut layered phyllo sheets and roll them up do not roll them up too tight. With the egg yolk, water, oil mixture, give the rolled sheets an egg wash. Sprinkle some black sesame seeds on top. Bake at 395F for 25-30 minutes, turning the tray midway for even baking. Enjoy! #leeks #fetacheese #phyllo #pırasalıbörek #börek #turkishcuisine
