When you are outfitting a new commercial kitchen, or if you’re rehabbing a kitchen that hasn’t been used in many years, the type of exhaust fans your ventilation system uses will be determined by the type of ventilation you need. In this video, we learn the difference between two types of exhaust fan systems most often used in commercial kitchen scenarios. Indicated by the different shapes between the two, the downblast and upblast are different in a couple key aspects. While both pull air up and out of your establishment, Downblast Exhaust Fans then force the air flow down, toward the roof. For that reason, Downblast Exhaust Fans cannot be used for grease applications. That is, they are for general ventilation only. Upblast Exhaust Fans, on the other hand, are perfect for grease applications, as they force air out and up, away from your roof. Both fan types of fan systems are operated with either a Belt Drive Exhaust Fan or a Direct Drive Exhaust Fan, the former favored for its affordability, and the latter for its lack of belt - which translates into more efficient operation. The Direct Drive Exhaust Fan has a greater up-front cost, but some stand by its ease of maintenance. Please note, however, that Direct Drive Exhaust Fans are a bit louder than their Belt Drive Exhaust Fan counterparts. Typically, both types of fans are installed on rooftops, although they may be mounted on walls as well. No matter the location of the installation, though, these fans always are put into a fan curb to ensure the correct balance and security of your unit. The fan bowl, blades and motor are housed in the fan curb. Notable about Upblast Exhaust Fans are that it is required by the National Fire Protection Agency (NFPA) that you’ve installed removable access panels on your ducts and a hinge kit installed on your exhaust fan. The Exhaust Fan Hinge Kit allows you to tip back your fan into the open position without ever having to remove it from the fan base. The most common rooftop ventilator is the Aluminum Centrifugal Upblast Exhaust Fans, which are constant displacement devices. This fan is the most popular for its reliability and flexibility - this type of unit holds up to a whole host of conditions and scenarios.
