Chicken Chili 3 thin-sliced chicken breast 3 cups chicken stock 2 large or 4 small golden potatoes 4 scallions (green and white part diced) 4 garlic cloves 1 can green chilies 1 can corn 1 can great northern beans 1 tbsp cumin 1 tsp smoked paprika 1 tsp oregano ½ tsp coriander ½ tsp cayenne ¼ tsp chipotle chili powder 1/8 tsp cardamom ½ tsp salt ¼ tsp black pepper 6 tbsp butter ¼ cup flour juice from 1 lime Process: Mix all the dry seasonings together in a bowl. Melt the butter in a large pot or Dutch oven over med-high heat. Place the chicken in and season one side. After about 3 minutes, flip and season the other side. After 3 minutes, remove the chicken. Reduce heat to med and add the potatoes. Cook for several minutes, stirring frequently. Next, add the white part of the onions and the garlic. Cook for about 3-5 minutes. Next, add the flour and cook for 1-2 minutes. Add the stock and stir well to combine. Ext, add the corn and the green chilies. Simmer for 10-15 minutes. While the chili simmers, dice up the chicken. It’s okay if they are not fully cooked. After 10-15 minutes, add the chicken back to the chili along with any accumulated juices. If you have any dry seasoning left, add it in too. Cook another five minutes. Next, add the beans. Continue simmering and stirring until the potatoes are cooked. Once the potatoes are done, taste and adjust the seasoning with some salt and pepper, if needed.
