Chrisman discusses the history of Olympia oysters (Ostrea lurida), also known as Puget Sound oysters or native oysters. In the 19th-century, oysters were eaten by rich and poor alike. Most oysters are named after the place where they are grown, but Olympia oysters are actually a different species. These oysters, indigenous to the waters around Seattle and along the Pacific coast, are much smaller and slower growing than other oyster species. They are very briny, with a strong coppery flavor that's much prized by oyster fans. They're so small that many 19th-century recipes call for them by the pint! Olympia oysters were incredibly popular in 19th-century Victorian times, but then on January 13th, 1907 a freak cold snap coinciding with an extraordinarily low tide nearly wiped out the species. Olympia oysters also faced competition from introduced Japanese Pacific oysters, but efforts are now being made to re-establish the species.
