Brunswick Stew is an absolute favorite dish in our household. I never dreamed of making it low carb until a subscriber asked. It made perfect sense, because although my husband and daughter love it, they could no longer enjoy the high carb versions served by their favorite restaurants. You may have your own traditional twists on this, but trust me when I say you have to try it! 1.5 lbs chopped smoked meat (pulled pork BBQ, brisket, chicken or any combination) 2 cups beef bone broth (or bouillon) 2 TBSP minced onion (or 1/3 cup fresh chopped 1 can green beans, drained 1/2 cup chopped cabbage 1 cup chopped zucchini 1/4 cup chopped jicama or water chestnuts (for crunch but optional) 4 ounces butter 1/2 teaspoon garlic 1/2 cup Low Carb BBQ sauce (use commercial sauce or make my homemade sauce--link below) 1/2 cup vinegar based BBQ sauce 1/2 cup strained tomatoes Add all into a large pot and simmer until vegetables are tender. Here's the link to the video that has the BBQ sauce. It's at the end of the video. • 4th of July sides and BBQ Sauce Here it is also: Start with tomato sauce (8 ounces). Add apple cider vinegar (2 tablespoons), 1 tablespoon prepared mustard, 1 tablespoon worcestershire, 1/8 tsp cloves, 1/8 tsp cinnamon, 1/2 tsp ground mustard. 1 teaspoon garlic powder, 1 teaspoon onion powder. 1/2 tsp salt, sweetener (to taste) and 1 tablespoon bacon fat. Add liquid smoke if you like and add cayenne if you like.
