Stuffed Achari Torai Serves 5-6 Recipe in English: Ingredients: -Tamatar (Tomatoes) cubed 2 medium -Achar gosht masala 4 tbs -Sarson ka tel (Mustard oil) 1 tbs -Lemon juice 2-3 tbs -Torai (Ridge gourd) 750 g -Hari mirch (Green chilli) 5-6 -Sarson ka tel (Mustard oil) 1/4 Cup -Zeera (Cumin seeds) ½ tbs -Kalonji (Nigella seeds) ½ tsp -Rai dana (Mustard seeds) ½ tsp -Dried red chillies 2-3 -Kary pata (Curry leaves) 9-10 -Adrak lehsan paste (Ginger garlic paste) 2 tbs -Pyaz (Onion) sliced 1 large -Namak (Salt) ½ tsp or to taste -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Haldee powder (Turmeric powder) ½ tsp -Garam masala powder 1 tsp -Kasuri methi (Dried fenugreek leaves) ½ tbs Directions: -In grinder add tomatoes and grind well. Set aside. -In a bowl add achar gosht masala, mustard oil, lemon juice and mix well. -Peel ridge gourd and cut into three pieces. Slit from the center & stuff with prepared achar masala. -Slit green chillies and stuff with prepared achar masala. Set aside. -In a wok add mustard oil and bring it to smoke. Add cumin seeds, nigella seeds, mustard seeds, dried red chilli and mix. -Add curry leaves, ginger garlic paste and mix well. -Add onion and fry until translucent. -Add grinded tomato and mix well. -Add salt, red chilli powder, turmeric powder, garam masala powder. Mix well and cook until oil separates. -Now add stuffed ridge gourd, cover and cook on low flame for 20-25 minutes. -Add stuffed green chillies & dried fenugreek leaves. Cover and simmer on low flame for 4-5 minutes & serve ! Recipe in Urdu: Ajza: -Tamatar (Tomatoes) cubed 2 medium -Achar gosht masala 4 tbs -Sarson ka tel (Mustard oil) 1 tbs -Lemon juice 2-3 tbs -Torai (Ridge gourd) 750 g -Hari mirch (Green chilli) 5-6 -Sarson ka tel (Mustard oil) 1/4 Cup -Zeera (Cumin seeds) ½ tbs -Kalonji (Nigella seeds) ½ tsp -Rai dana (Mustard seeds) ½ tsp -Dried red chillies 2-3 -Kary pata (Curry leaves) 9-10 -Adrak lehsan paste (Ginger garlic paste) 2 tbs -Pyaz (Onion) sliced 1 large -Namak (Salt) ½ tsp or to taste -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Haldee powder (Turmeric powder) ½ tsp -Garam masala powder 1 tsp -Kasuri methi (Dried fenugreek leaves) ½ tbs Directions: -Grinder mein tamatar ko ache tarha grind ker lein & side per rakh dein. -Bowl mein achar gosht masala, sarson k tel aur lemon juice ko ache tarha mix ker lein. -Torai ko cheel lein. Teen pieces mein cut ker k beech mein slit laga lein aur prepared achar masala bhar dein. -Hari mirch ko kaat kar prepared achar masala bhar dein & side per rakh dein. -Karhai mein sarson ka tel ko smoke anay tak garam ker lein. Zeera, kalonji, rai dana aur dried red chillies daal ker mix karein. -Kary pata aur adrak lehsan paste daal ker ache tarha mix ker lein. -Pyaz daal kar translucent hunay tak fry ker len. -Grinded tamatar daal ker ache tarha mix ker len. -Namak, lal mirch powder, haldee powder aur garam masala powder daal ker ache tarha mix karen aur oil alag hunay tak paka len. -Ab stuffed torai daal ker dhak dein aur halki ancch per 20-25 minutes k liye paka len. -Stuffed hari mirch aur kasuri methi daal ker dhak dein aur halki ancch per 4-5 minute k liye dum per rakh dein & serve karen.
