Crispy Aaloo Samosa Recipe 🥟 Ingredients For the Dough • Maida (All-purpose flour) – 2 cups • Carom seeds (Ajwain) – ½ tsp • Salt – to taste • Oil – 3 tbsp • Water – as needed (for stiff dough) For the Stuffing • Oil – 2 tbsp • Cumin seeds – 1 tsp • Onion – 1 medium, finely chopped • Capsicum – ½ cup, finely chopped • Green peas – ½ cup • Boiled potatoes – 3–4, mashed • Salt – to taste • Red chilli powder – 1 tsp • Garam masala – 1 tsp • Fresh coriander leaves – chopped ⸻ Method Step 1: Prepare the Dough 1. In a bowl, add maida, ajwain, salt, and oil. 2. Mix well until it forms a crumbly texture. 3. Add water little by little and knead into a stiff dough. 4. Cover and rest for 20 minutes. ⸻ Step 2: Prepare the Stuffing 1. Heat oil in a pan and add cumin seeds. 2. Add chopped onions and sauté until light golden. 3. Add capsicum and green peas; cook for 2–3 minutes. 4. Add mashed potatoes, salt, chilli powder, and garam masala. 5. Mix well and cook for 2 minutes. 6. Switch off flame and add coriander leaves. Let it cool. ⸻ Step 3: Shape the Samosas 1. Divide dough into small balls and roll into oval shapes. 2. Cut in half, make a cone, and fill with potato stuffing. 3. Seal the edges with water. ⸻ Step 4: Frying 1. Heat oil on low to medium flame. 2. Add samosas and fry slowly until golden and crispy. 3. Remove and drain excess oil. Serving Suggestion Serve hot Aaloo Samosas with green chutney or ketchup ☺️
