Baked feta cheese with honey, lavender and thyme transforms some simple larder ingredients into something rather out of the ordinary. A versatile dish, it can be served as a starter or alongside the cheese course; or, paired with garlic croutons and a salad, it makes for a quick and elegant lunch. See written recipe below! Jump Links 00:25 Quick Garlic Croutons 03:20 Baking the Feta Cheese Recipe | Honey-baked Feta with Lavender and Garlic Croutons Serves 2 Ingredients 200g feta cheese ½ baguette or loaf of rye bread 4 Tbs of olive oil 1 garlic clove, peeled and halved 4 Tbs of runny honey 4 sprigs of thyme 2 lavender sprigs, or half a teaspoon of dried lavender Salt and pepper, to taste Method 1. Preheat the oven to 200°C/gas mark 6. 2. Wrap the feta in some kitchen paper and leave at room temperature to absorb any liquid while preparing the other ingredients. 3. Cut the baguette or rye bread into thin slices. Place them in a single layer on a baking tray. (Or, repeat the process in 2 batches if you have more bread than tray space!). Drizzle the bread with olive oil. 4. Bake the bread slices in the oven for 7-10 minutes until golden and crisp. Remove the croutons and let them cool enough to handle comfortably. Rub the cut end of the garlic clove across one side of each bread slice. Repeat the step above if doing a second batch. 5. Turn the oven to its grill setting. 6. Remove the kitchen paper from the cheese and place the feta in a small baking dish (or ovenproof plate) just large enough to fit snuggly. Drizzle the honey over the cheese, then add the thyme leaves and lavender blossoms. Season with salt and pepper, to taste, and grill for 5-10 minutes until the top is golden. 7. Serve immediately with the garlic croutons.
