(about 27 EBU) Sweet (not the bitter one) orange peel 2.000 gr. Andaliman pepper (not Szechuan) 300 gr. ---------------------------------------- Ferment with Mangrove Jack's M31 Belgian Tripel, at 21°C (Since there are no big packs of M31, I made a 2 step starter ) Bottling with 2,3 Volumes of CO2 You can make your own adaptation for a smaller batch based on the 500 liters, I toned down the IBU's a bit. Most important is that you use sweet orange peel and Andaliman (not Szechuan) pepper in a 40 minutes flame out. And Eureka was not available for me right now, instead I used Simcoe 25 liter: OG 1069 Brewhouse eff. 75.0% 1-step mash 66°C 60 Min Boil 60 min. ---------------------------------------- Pils or pale malt: 7,3 kg Sugar 280 gr ---------------------------------------- Simcoe 11,9 % 6 gr 60 Min. 7 EBU Simcoe 11,9 % 20 gr 40 Min. flameout 15 EBU Sweet Orangepeel 100 gr. 40 min. flameout Andaliman pepper 13 gr. 40 min. flameout ---------------------------------------- Mangrove Jack's M31 Belgian Tripel - 3 packs Ferment at 21 °C Fermentation should be done within a few days. Bottle after 2 weeks. Expect gravity to drop all the way to 1010, which should leave you with 7,8% ABV, including bottling sugar, that should bring you above 8% ABV Bottle condition with 6gr./l Be prepared that the first few weeks the flavor might be quite intense.
