Welcome back to the Tingle Kitchen. In this video I make home made Fettuccine and Alfredo Sauce for ASMR Relaxation. If you've never had or made home-made pasta you really should try it. It is remarkable different than the store bought dried pasta. There is more flavor and the texture is smoother IMO. Recipe on my blog http://tinglekitchenasmr.blogspot.com... Ingredients 2 Eggs 1 Egg Yoke 2 cups unbleached all purpose flower pasta maker (optional, you can cut them with a knife but it's much more difficult) Sauce 1 cup heavy whipping cream 1/4 cut Parmesan cheese (1/4 cup romano cheese, optional) 3 tbs butter Black Pepper Recipe Pasta Pour the flour out onto a counter top or cutting board create a well or nest in the flour pile. Crack 2 whole eggs into nest/well (salt: You can add salt here as well. I choose not to and add the salt later but many recipes call for it) Beat the eggs and incorporate the flour until a wet dough begins to form kneed the dough until it is firm and form a ball Allow the dough to rest for 5 to 10 minutes Roll it out with a rolling pin until it is flat enough to fit in the pasta maker cut it to fit the pasta maker Roll the pasta into a thin strip and then cut it to the desired shape with the pasta maker Sauce In a medium saute pan, melt the butter. add the cream and allow to cook add the paramean cheese and stir until well blended and melted (optionally you can add romano cheese as well but I find the flavor too strong) temper the egg yolk and stir it into the sauce Add pepper to taste To make the pasta boil it for 3 to 4 minutes if home made or if you use boxed pasta follow the instructions on the box (likely 8 to 10 minutes) Take the pasta directly from the pot and toss it in the sauce. The starch will help to thicken the sauce. You can eat it like this or top with grated Parmesan cheese, pepper, and/or basil
