Karnataka is home to some of the most unique biryanis in India — each with its own history, style, and fan following. On this food trail, I went from coastal Bhatkal to the streets of Bengaluru to figure out which one deserves the crown. In Bhatkal, I dug into plates of fish and prawn biryani — light, fragrant, and seafood-forward, especially the prawns that stood out with their freshness. Then it was time for Bengaluru’s iconic Muslim bhai biryani at the ninety-year-old Taj Hotel, where the mutton, ginger garlic, and short-grain rice created a completely different vibe. Finally, Chickpet’s donne biryani house brought me chicken and mutton biryani served in the traditional green leaf. Herby, spicy, and deeply meaty, it was the perfect finish. Karnataka’s biryani culture is diverse, flavourful, and unforgettable — but which one would you crown the queen?
