Home Cooking Sessions: Risotto al Salto with a Three Cheese Fonduta. My favourite type of risotto. Rich, crispy and delicious. Full recipe below! 👇🏽😍 - 1. Start with the risotto! 2. Bring 1.5L chicken stock up to a gentle simmer, then add in some ground saffron and leave to infuse 3. Finely mince one shallot + 2 cloves garlic, then lace a pan with EV olive oil and bring to med heat 4. Add the shallots + garlic and sauté for 3-4 mins, then add 3-400g carnaroli rice and sauté for ~2 mins 5. Once combined and toasted, deglaze pan with a nice white wine ~250ml and reduce till almost gone, then ladle in your hot chicken stock a couple ladles at a time 6. Keep stirring till fully absorbed, then add in another two ladles - repeat until the rice is al dente and almost fully cooked 7. Finally, add in a generous amount of parmigiano reggiano ~65g and throw in 3-4tbsp unsalted butter 8. Meld vigorously to emulsify, using additional stock to loosen and create a flowy, creamy consistency 9. Pour out onto a baking dish lined with parchment and leave to cool, then place in fridge overnight 10. Remove from fridge and then use a ring mould to cut out a few discs 11. Bring a non-stick pan to med heat, add in a little butter, then place in your risotto disc to toast for 2 mins - heat management is vital here, too hot and it’ll become a mess, but too low and it won’t brown! 12. Use a plate to flip, then sear the other side 13. Fonduta: combine 150ml each whole milk + cream, bring to med heat, then throw in 100 cubed taleggio, 100g fontina, 50g parm, stir to melt. Once at 85c, add in 4 egg yolks and whisk to emulsify and thicken. Blitz till smooth and season to taste 14. Plate up with a good spoon of the fonduta, then place on your toasted risotto and top with flakey salt and chives - This was unreal. Inspired by my visit to @leos.london by chef @pep_belvedere - it’s an amazing dish and I am yet to perfect it.
