These Black Currant Crumb Bars are my favorite jam bars and the only recipe I use! They are so good, easy to make and perfect for picnics and summer parties! INGREDIENTS For the Crumb: 3 cups all-purpose flour, sifted ½ cup granulated sugar ¼ teaspoon salt ½ teaspoon baking soda with vinegar 1 tablespoon lemon juice 2 tablespoons sour cream 2 large eggs 13 Tbsp (6 oz) unsalted butter, melted For the Filling: Black Currant Jam (you can use any jam or fresh berries) PREPARATION 1. Preheat oven to 350°F/180°C. Line a 9×13-inch baking pan with parchment. 2. In a medium bowl, combine all ingredients. Use your hands knead the dough. Press half of dough into the prepared pan. The second half of the dough put into the refrigerate for 15 minutes. 3. Spread the black currant jam evenly over the crust. Grate the chilled dough evenly over the black currant layer. 4. Bake for 30 to 35 minutes, or until the top is light golden brown.
