Recipe: Cupcakes: 3/4 cup all purpose flour 1 cup self rising flour mix together in small bowl and set aside. In mixing bowl add: 1 stick butter (softened) 1 cup sugar mix well. Add 2 eggs 3 tablespoons of lime juice green food color mix well. Alternate adding flour mixture and 3/4 cup buttermilk until well blended. Add to cupcake tins. Bake on 350 degrees for 20 -25 minutes. Test with toothpick. When the toothpick comes out clean they are ready. Key Lime Filling: 8 ounces of Mascarpone cheese, at room temperature 5 ounces key lime juice 1 can sweetened condensed milk Place all ingredients in mixing bowl. Mix on low for about 30 seconds. Increase speed to medium for about 2 minutes. Place in small bowl and place in fridge to 2 hours. After your cupcakes are completely cool you can fill your cupcakes. Key Lime Buttercream Frosting: 1/2 cup Crisco 1/2 cup butter (stick) Mix until well blended. Add: 1 teaspoon vanilla 1 tablespoon key lime juice 1 tablespoon milk Mix well. 4 cups powdered sugar.
