Recipe: 640g (4 1/4 cup) bread flour or cake flour 10g (3 tbs) instant yeast 110g (1/2 cup) caster sugar 2 tsp cinnamon powder 2 tsp all-spice or mixed spice 1 tsp salt 1 1/2 cup sultanas or seedless raisins (same amount if making chocolate version) 1/2 cup (375ml) whole milk 50g (3 1/2 tbsp) unsalted butter, melted 1 egg, room temperature Crosses: 1/2 cup flour (any flour) 1/2 cup + 2 tbsp water Glaze: 1 tbsp apricot jam or honey 2 tsp water Method: In a large mixing bowl, mix together the dry ingredients, flour, sugar, cinnamon powder, mixed spice and salt. You can add the yeast if you're confident that it's active. Otherwise, add the yeast to the warm milk. Stir and let it sit for 5-10 minutes. Add the sultanas (only if making one version), milk mixture, butter and beaten egg to the dry ingredients. (If you're making the chocolate and classic version, add them after kneading the dough) Knead the dough by hand or in a stand mixer, attached with a dough hook for about 10 minutes until it does not break and it's smooth. In a clean bowl, cover with a damp towel and let it rise for about an hour or until doubled in size. Line a baking tray with baking paper Punch dough to deflate. Place dough on work surface and roll it into a log. Divide them equally. This recipe makes 12 hot cross buns. Gather and roll them into a ball. (it creates tension in the dough) Place the ball with the smooth side up in the baking tray. Repeat. Cover again with a damp towel and let it rise about 75%. Halfway through the rise, preheat the oven to 180°C/350°F For the crosses, mix the flour and water. It's okay if it looks a little bit lumpy. It should be the consistency of pancake batter. Spoon in a piping- or zip lock bag. Pipe crossed over the buns. Bake in preheated oven for 20 minutes or until the surface is a deep golden brown. Meanwhile, place jam/honey and water in a bowl and microwave for 30 seconds. Mix to combine. Once the buns are out of the oven, brush the glaze over them.
