These easy strawberry oat crumble bars are one of my favourite summer desserts, with a crunchy oat crumble base and topping and a rich strawberry filling these are the best strawberry crumble bars! Follow along with our step by step strawberry bar recipe and learn how to make this easy strawberry oat bar! These oat crumble bars can be made with any berry, and turn out great with fresh or frozen berries; making them very versatile and perfect for picnics, potlucks or just as an easy snack. Strawberry Crumble Bar Recipe Ingredients: 1 1/4 Cup oats (old fashioned or large flake) 1 Cup All purpose flour 1/3 Cup brown sugar 1/3 Cup butter (melted and cooled) 1 Tablespoon White granulated sugar 1 Tablespoon cornstarch 2 Cups Strawberries (fresh or frozen) Directions: Preheat your oven to 375 F/190 C. Line an 8x8 Pan with parchment paper. In a medium bowl oats, flour and brown sugar. Mix well, ensuring there are no clumps of brown sugar. Add butter and mix until a crumble forms. pack 1/2 of the crumble mixture into the bottom of the pan to form the base of these strawberry bars. In a small bowl combine white sugar and corn starch and whick until combined. Place your strawberries in a medium bowl and pour the sugar/cornstarch mixture over top. Toss berries in this mixture until fully coated. Pour the strawberries over the base, and spread into an even layer. Pour the rest of the crumble mixture on top, and level out. Do not pack down the crumble on the top of the bars. Bake in your preheated oven for 35-45 minutes. Remove when the top is golden brown and the strawberries are bubbling. Cool at room temperature for 4 hours, or 2 hours in the fridge. Slice into squares and enjoy!
