This dish is made using sprouts of green gram in a delicious coconut gravy which is tempered with mustard leaves and curry leaves. This mooga gathi recipe is a pure veg dish made without using onion and garlic. This dish made with sprouts of green gram tastes so delicious that you will want to eat more. This dish is also made on special occasions like pooja and festivals where we eat pure veg food. It tastes best with pooris, but some people love to eat it with rice. In Goan temples, pure veg food without onion and without garlic is served on special occasions. Moong sprouts are extremely good for health. They are rich in proteins and loaded with vitamins and minerals. They help lower cholesterol and reduce weight. INGREDIENTS: Water – 2 glasses Sprouted Moong – 1 bowl Green chillies – 3 to 4 Tomato – 1 big size Turmeric powder – ¼ tsp. Jaggery -1 tbsp. Salt as per taste For Coconut Paste: Coconut – 1 small size Green chillies – 4 Dry coriander seeds – ½ tsp. Black pepper – 5 Cloves – 3 Turmeric powder – ½ tsp. Oil – 2tsp. Water – ½ cup For Tadka: Oil – 2tsp. Mustard seeds – 1 tsp. Hing – 1 tsp. Curry leaves METHOD/PREPARATION Step 1: Boil 2 glasses of water, add sprouted Moong (I took 250 gm whole Moog), add green chilies, tomato, and turmeric powder, and cook till sprouted Moog is 75% cooked. (Being Moog skin has lots of vitamins, minerals, and calcium I am not removing it, if you don’t like Moog skin you can remove it at this stage) Step 2: (all ingredients mentioned above) In a pan, dry roast black pepper, cloves, and dry coriander seeds for some time. remove in a bowl. In the same pan heat 2tsp oil, add green chillies saute for a minute, add freshly grated coconut, and saute on low flame till aroma is realized, allow it to cool, and remove in the same bowl. Transfer it to a grinder jar, add water, and grind it to a semi-fine paste. Add ground coconut paste, add a little water stir for some time on medium to low flame, and add jaggery and salt as per taste. Give a stir. allow it to cook till gravy becomes thick, meanwhile, give tadka. Step 3: In a small pan, add heat oil, add hing, mustard seeds (once mustard seeds pop up), and curry leaves. Tadka is ready, Add in a mooga gathi mix it well on low flame, cover and cook for 2 minutes on medium to high flame. Moongachi gathi is served with hot puris or hot steamed rice.
