SALTED CARAMEL WHIPPED CREAM 200 ml heavy cream 50 g sugar 1 pinch salt Optional: 1 sheet of gelatin - soak the gelatin in COLD water before dissolving in the hot cream (in the video I mistakenly say that it is soaked in hot water) NOTES ON INGREDIENTS, OVEN AND MEASUREMENTS: Unless otherwise stated in my recipes, I use (when applicable to the recipe): • Unbleached flour, type 55 • Large eggs • Butter (I use butter and never margarine or vegetable creams. Butter can be salted or unsalted, it's a matter of personal taste) • Whole milk • Cream with 35% fat • Sunflower oil • Vanilla paste (1 teaspoon of paste is equivalent to more or less 1 small pod, but you can substitute it with extract in the same quantity) • 50% cocoa chocolate (whenever I mention dark chocolate) Also unless otherwise stated, I always use a fan-assisted oven with the actual oven temperature controlled with a thermometer oven.
