Sliced tortillas and strips and fry in oil, it only takes about 30 to 40 seconds. Sauté onion and butter until translucent set aside. Roast poblano peppers by baking in oven on 425 until skin is blistered place in a bowl and cover for about 10 to 15 minutes then peel the skin off and discard the seed and stem. Melt butter and flour together And cook about one to two minutes then slowly add in chicken broth until it begins to thicken then add onions, chicken, sour cream, peppers, and seasoning, mixing well, then add one cup of melting cheese until it is melted. In buttered casserole dish add a layer of tortilla strips then layer with half of the chicken mixture and top with cheese repeat layers, then top with crumbled strips and a layer of cheese and sprinkle with reserved poblano peppers if desired cover with full and bake for 20 minutes remove the foil and bake until browned and bubbly.
